Notes
The bulgur can be used in the same preparations of cous cous which has now become commonplace, even on our plates, and its neutral flavor lends itself well to be accompanied by sauces of meat or fish, or as a relish for dishes. The bulgur wheat is undergoing a particular process, the grains of wheat are steamed and then left to dry up and then are ground to reduce them into small pieces. The bulgur is in the form of crumbs; cooking is similar to that of other cereals in fact it is always advisable to cook it in twice its weight of water for about 15-20 minutes.
