  • 8 egg whites
  • 2 tablespoons snipped fresh chives
  • 130 g (41/2 oz) can creamed corn 50 g (12/3 oz) baby spinach, roughly chopped
  • cracked black pepper
  • canola oil spray
  • ⅓ cup (40 g/11/3 oz) grated reduced-fat cheddar cheese
  1. Whisk the egg whites, chives, corn and spinach together. Season with cracked black pepper.
  2. Lightly spray a non-stick fry pan with canola oil spray. Heat the pan over medium heat, add a quarter of the egg white mixture and swirl to coat the base of the pan.
  3. Sprinkle with a quarter of the grated cheese. Cook for 3-5 minutes or until the underneath just begins to set. Fold in half using an egg slice. Slide onto a plate. Repeat with the remaining egg white mixture and grated cheese. Serve with wholegrain toast.
