  • 375 g (12 oz) ricotta and spinach
  • filled pasta (agnolotti, ravioli) 200 g (61/2 oz) trimmed green beans 200 g (61/2 oz) cherry tomatoes,
  • cut into wedges
  • 50 g (12/3 oz) kalamata olives
  • 100 g (31/3 oz) artichoke hearts in brine, drained
  • 1 medium Lebanese cucumber, unpeeled and sliced
  • 1 medium green capsicum (bell pepper), sliced
  • 400 g (13 oz) can chunk-style tuna in spring water, drained
  • 2 tablespoons fresh basil leaves
  • 2 tablespoons lemon juice
  • 1 clove garlic, crushed
  • 2 teaspoons extra virgin olive oil
  • 1 teaspoon cracked black pepper
  • 2 hard-boiled eggs
  1. Cook the ravioli in a large pan of rapidly boiling water for 5 minutes, then add the beans and cook for another 5 minutes or until the beans are tender and the pasta is al dente (cooked, but still with a bite to it). Remove and drain well.
  2. Put the pasta, beans, tomatoes, olives, artichoke hearts, cucumber, capsicum, tuna and basil into a bowl. Mix gently to combine.
  3. Whisk together the lemon juice, garlic, olive oil and pepper, drizzle over the salad and toss gently to combine.
  4. Grate the eggs over the top of the salad and serve immediately.
